Question
I am told to use active listening, and in practice that seems to mean summarising back what someone said. When I do it, it feels mechanical and I suspect it sounds mechanical too. What does this actually look like when it works?

It sounds mechanical when the summary is the whole technique. Repeating someone's words proves you heard the sounds. What tells her you followed is checking the thing she did not say directly, and being willing to be corrected.
A summary that lands usually has a question attached and an obvious way out. Not, so you are worried about the course, but, it sounds like the timing is the problem more than the course itself, is that right. If she says no, you learn something. If the summary can only be agreed with, it was not doing any work.
Two habits do more than any phrasing. Ask about the specific instead of the general: not how the job search is going, but what happened with the application you sent last week. And resist offering a solution in the same breath as the sympathy, because the solution ends the topic and you often reach for it just when she was about to say the harder half.

One thing worth adding, because it comes up often in guidance work. Empathy is not the same as agreeing, and it is not the same as taking the weight yourself. You can fully understand why a mentee will not report an employer and still say plainly what the risk is. Understanding her reason is what makes the warning hearable rather than a lecture.
The failure mode in the other direction is carrying it home. If a session leaves you unable to put it down, that is a supervision matter, not a sign that you were especially empathetic. Someone who burns out stops being available, and availability is most of what mentoring is.
